Water degumming of Crude Soya Oil produces wet gums which are rich in phosphotides (Lecithin). The wet gums are heated in a special scrapped surface Heat Exchanger and then flashed in a vapour separator.

The moisture in the gums is evaporated and liquid Lecithin seperated is then cooled in an other scrapped surface Heat Exchanger.

The Lecithin produced has an Acetone insoluble content of approximately 60% and is fluid in nature.
